NYC | Vegan Afternoon Tea at Baccarat Hotel

Before we begin Baccarat’s afternoon tea, a trio of tea-based beverages.

First, Rose Petal. Strawberries, ginger, and lemon juice. Rosewater and sparkling water…

Second, Rosemary Matcha. Ippodo matcha and rosemary simple syrup. Yuzu, ginger, and lemon. Sparkling water.

Third, Matcha Cocktail. Cachaça and velvet falernum. Egg whites and lavender syrup.

And now it is time for the Prince of Wales afternoon tea…a vegan (!) afternoon tea. It’s the newest addition to the line-up at Baccarat. Other afternoon tea options: King Louis XV (and the former Prince of Wales format), Valentine’s Tea, and Tsar Nicholas II.

Each afternoon tea service pairs with a specific tea and the new Prince of Wales goes with Earl Grey D’Or (from Mariage Frères).

Pistachio financier with cashew mousse and blackberries.

Eggplant ravioli with smoked tofu and basil

Pan perdu, with mushrooms and espelette custard.

Wonton crisp, honeycrisp apple, and beets.

Mille-feuille of hummus, avocado, and truffle.

A refresher, and then…

…warm scones.

Served with apricot and raspberry gelée.

Chocolate sacher torte.

Fruit tartlette. Figs, blackberries and gooseberries. Fraises des bois, most beautiful.

Mango and hazelnut dome.

Raspberry and rose sablé.
