Koicha is like matcha except with twice the amount of matcha powder and half the water.
It’s referred to as “thick matcha” and has the consistency of paint. Super potent.
I’d take this over coffee any afternoon.
Sift four scoops of *matcha powder into your bowl (the ones pictured here are by the amazing Christina). Add one ounce of hot water…
…and instead of quickly whisking, gently knead the matcha. You want a smooth, very thick tea.
*You’ll need a different grade of matcha powder to make koicha (thick matcha). The type of matcha that works for usucha (thin matcha) won’t work for koicha. More on this in a future post.
