Paris | Spring

We met on a Friday afternoon in Paris. Breizh Café galettes for lunch and Mariage Frères for tea. Then it was time for a nap followed by supper at Spring.

There were radishes and chives…

…cauliflower and sweet pears.

Razor clams!

Caramelized mackerel,  squid, and cucumbers. 

Sole, morels, spring onions, and a yellow wine froth.

Magret de canard! With turnips and peas. This was followed by a second duck course of the confit legs…

…and potatoes fried in duck fat. Ahhh my weakness!!!

It would be silly to turn down a cheese course, no?

Left to right: a 20-month Comté from Jura, Valençay, Munster from Alsace, and Fourme d’Ambert.

And onto the sweets. Almond and chocolate macarons…

…and the sweetest kumquats.

A tasting of chocolates. Dark chocolate cake and ganache followed by…

…white chocolate cream and vanilla beans…

…paired with milk chocolate cream. A very lovely evening ^_^
