Snapshots from last night’s uni dinner at Louro. So creative! Dave hosts themed Nossa Mesa nights from time to time…I was out of town for the first uni dinner so was extra happy to make this one. Can’t wait for round three ^_^
An amuse of fried spearing and uni aioli…
…along with housemade bread and pork butter (excellent, though I really miss the lard-based Portuguese butter).
Uni crudo with hamachi, yuzu foam and toasted puffed rice.
Uni “tea” with black truffles and poached lobster.
Uni-stuffed calamari in a bath of spicy tomatoes and uni foam followed by…
…uni ravioli stuffed with whipped ricotta and uni butter. A bit of basil to finish.
And how crazy is this one? Miso short ribs atop uni pudding (!) with bok choy and bean sprouts.
And finally, warm chocolate cakes with malt ice cream (no uni in this one ;)
