Snapshots from the third annual Best of Asia hosted by the Regent Taipei.
André Chiang (Restaurant Andre, Singapore) headlines the event each year, and this time around he brought Corey Lee (Benu, SF), Alvin Leung (Bo Innovation, Hong Kong) and Seiji Yamamoto (Nihonryori RyuGin, Tokyo) for a four-day gala. Here’s what we ate the first night…based off this meal, I need to plan a trip to Singapore asap ;)
Crackers of porcini mushrooms (top) and sweet prawns…
…followed by chlorophyll capsules in avocado butter.[Pairing: NV Duval-Leroy, Fleur de Champagne, Brut]
Braised abalone with seaweed risotto. Topped with caviar, kelp coulis, and chard crisps.
[Pairing: 2010 Domaine Jacques Prieur, Champs Pimont, Beaune 1er Cru]
Warm foie gras jelly with Perigord truffles and fleur de sel.
Wheat spelt-apricot ragout, pork belly cooked in butter, potato soufflé, and broccoli mousse.
[Pairing: 2008 Château Giscours Margaux]
Edamane and rice puffs with miso and salt.
Dessert! Lollipops in strawberry-sangria, pineapple-mojito, and cucumber-gin. One of each, s’il vous plaît ^_^
