And this mignardise display? I was all but ready to whisk it home with me ^_^

…and passed hors d’oeuvres. How I’ve missed these salmon cornets!
Every course involved pomegranate in one form or another. The first was an easy favorite. Uni and avocado…my two loves. Paired with radishes, pea shoots, whipped yuzu, and a pomegranate granité infused with spruce tip.
Next, Heirloom Cauliflower “Tarte” with green almonds and roasted beets. Persian cucumbers with a stonecrop and pomegranate-shishito (what a combo!) vinaigrette…

For our mains, the Niman Ranch Beef Rib-Eye with a pomegranate-molasses jus. On the side, charcoal grilled fingerling potatoes, brentwood corn, and crispy spinach tempura.
And then…time for dessert! Let’s break this Pomegranate Trifle down, piece by piece. From the left, a layered pomegrante gelée, blueberry mousse, aerated white chocolate, and créme fraîche sherbet over shortbread crumble.
And then we took a little break for tea. Earl grey, please. Per Se sources teas from San Rafael-based Rare Cargo. And how about the mignardises? Strawberry macarons! Blueberry financiers. Killer nougats! Chocolate tarts. Lemon meringue tarts! Fruit gelée. And chocolates galore…the best was a matcha-yogurt combo enrobed in white chocolate.
