Pancakes at Perla today.
Foie gras appears in not one but two forms. First as a scoop (I wish it was twice as big!) of whipped foie gras butter. And second, with savory foie gras drippings mixed into the pancake batter. Lacy, crisp pancake edges. Fluffy all the way through with caramelized peaches to finish. I didn’t even need maple syrup.
