This photo is a bit of a disaster. But trust me, it was delicious. Olive’s in Soho makes this vegetarian sandwich that is all at once spicy, buttery fresh and flavorful using basic ingredients. It’s my single favorite “everyday lunch sandwich.” The $9.50 price tag isn’t bad, but adds up if you eat it frequently enough. Especially because it’s a small sandwich – sized accordingly so that you’ll crave a hunky slice of chocolate cake just hours later.
One particularly busy day, no time to sit and think, I bought THREE sandwiches. One for lunch, another for the afternoon, and the third for dinner. As the cashier rung up the order, I panicked and immediately thought: are you crazy, you just spent $30 on avocado sandwiches! Ridiculous. Only one solution. For the sake of my wallet and convenience, I just had to learn how to make this sandwich myself. Luckily enough the components are listed clear and simple on the menu: California Avocado, Vermont Sharp Cheddar, Crunchy Sprouts, Red Onion, Tomato, Chipotle Mayo, and 7-Grain Bread.
Greg accompanied me to Whole Foods, and off we went to find the ingredients. He did the calculations and it broke down to $4.50 a sandwich for ingredients alone. Not including labor ;) The homemade version didn’t come out exactly the same as Olive’s (just need to find out where they source their bread), but pretty darn close. Good enough to call it a success. And I could tweak to personal preferences, toasting the bread, doubling the avocado and cheddar, and serving it open-faced to devour with fork + knife. As for the chipotle mayo? Don’t bother making your own…the chipotle mayo by Kraft is embarrassingly awesome.
