Mom made one of our family favourite che's for midnight snack. Sweet potato, tapioca, mung beans, and jellies in coconut milk. So good hot and cold. She made one big pot and now I'll have plenty for breakfast in the days to come!

This is also one of my favorite desserts too. I adore the delicate flavors and textures, and of course the creamy coconut milk.

So simple! My mom just boils together tapioca and jellies that she buys in Chinatown. She boils the mung beans and sweet potato (skin off, diced) separately. And then boils coconut milk, adds in a bit of sugar, and combine all. Do the proportions to your liking ^_^
